摘要：El estudio analiza la oferta académica de las universidades e institutos tecnológicos superiores en donde el campo amplio sea “Servicios” como parte de la formación técnica y tecnológica. Esta investigación examina la oferta académica de la carrera de gastronomía y panadería, la mano de obra calificada, oferta, demanda y la brecha laboral en la provincia de Imbabura, mediante la integración de saberes, contextos y culturas en las diferentes mallas curriculares que se ofertan en el país. Para este artículo fue necesario realizar un cuadro estadístico y un análisis de la oferta académica actual, como mecanismo de acercamiento y confianza la finalidad es determinar la demanda existente logrando una educación integral, con visión intercultural acorde con la diversidad geográfica y lingüística.
其他摘要：The study analyzes the academic offer of universities and higher technological institutes where the broad field is "Services" as part of technical and technological training. This research examines the academic offer of the gastronomy and bakery career, skilled labor, supply, demand and the labor gap in the province of Imbabura, through the integration of knowledge, contexts and cultures in the different curricular meshes that are offered in the country. For this article, it was necessary to make a statistical table and an analysis of the current academic offer, as a mechanism of approach and confidence; the purpose is to determine the existing demand, achieving an integral education, with an intercultural vision in accordance with geographic and linguistic diversity.
